Bresaola

Bresaola is an Italian cured beef, usually made with meat from the eye fillet of the cow, a very lean and tender cut. It originated in small regions in the mountainous far north of Italy, specifically Valtellina, a valley in the Alps of northern Italy’s Lombardy region. It has a sweet, aromatic flavour that accentuates the taste of the lean beef it’s made from.
